Built in 1882 and listed on the National Register of Historic Places, Hotel Roanoke blends timeless charm with modern amenities and plenty of dining experiences to create a retreat for everyone from foodies to business executives and out-of-towners.
For the third year in a row, they have earned the coveted AAA Four Diamond Rating, and one of their in-house restaurants, The Regency Room, holds the proud title as Roanoke Valley’s only AAA Four Diamond restaurant. Spearheading the culinary efforts at the hotel is Executive Chef Stephen DeMarco, 52, a seasoned industry veteran who has been working in restaurants since his teens.
“I’ve been in the industry since I was 14 [as a dishwasher],” says DeMarco, a graduate of the culinary college Johnson & Wales in Rhode Island. “Of my course interest [in cooking] was peaked being in my mothers and grandmothers kitchens.”
Hotel Roanoke also houses a number of other dining options besides The Regency Room, from the modern and rustic Pine Room to 1882 Lobby Bar — the name an ode to when the hotel was first conceived — and a cafe Steam Coffee + Eatery.
Spending the majority of his culinary career in Manhattan, DeMarco’s resume includes stints at Capital Grille, Asia De Cuba and Olives W. Hotel.
Seven years ago, he joined the Hotel Roanoke team, but says his relationship with Cavalier Produce began over a decade ago.
“Been with Cavalier for approximately 12 years,” says DeMarco, who sources produce, local cheeses, seafood and more from the company. “[The] relationship has been one of the best in my professional career. Spencer and Steve take great care of us, always communicate and quick to respond to our questions and emails. Couldn’t be happier.”
As for a menu standout, DeMarco says The Pine Room — a former officer’s club and pub during World War II, turned stylish eatery with open views of the culinary magic taking place in the kitchen — dishes out a whole bass that is a treat for diners.
“Our whole bass that we do in The Pine Room is fantastic, and one of the items we get from Cavalier,” he says.
